In a lot of ways a full blown flood causes less damage and is easier to restore than a slow non suspecting drip underneath a counter. For example, a commode supply line bursts when nobody is home spewing out 50 - 150 gallons of water. Submerging everything in its path. That would reek havoc but it is what it is. No surprises. Easy to service.
Conversely, a slow drip is underestimated because we take it too lightly. We see a little puddle, assume the kids or the dog spilled, wipe it up and forget about it.
Mold wants a specific set of living conditions in order to thrive. Its a living thing so just like us, we prefer favorable living conditions suited for our lifestyle. We prefer a lot of things depending on who you ask but what we DON'T want is to be left somewhere where food, water, and shelter are scarce. Nor does mold.
A slow drip can supply just enough water over a duration to amplify mold very quickly for a very long time. Mold wants to hide in the dark with little or no air movement and eat natural things like dust, leaves, and paper. Underneath a cabinet or within a wall cavity is the perfect breeding ground for mold.
